MY FAVORITE GLUTEN FREE & VEGAN OREO CAKE

Som dere sikkert har fått med dere så foretrekker jeg naturlige ingredienser, helst uten tilsatt sukker og så rent som overhodet mulig, ettersom det jeg spiser har mye å si for symptomer og ting jeg sliter med på daglig basis, men så er det jo viktig å kose seg skikkelig innimellom. Og for spesielle anledninger er det nettopp denne kaken jeg elsker å lage (og spise)! Gjør dere klare for verdens beste veganske og glutenfrie Oreokake! Oppskriften kan selvfølgelig også brukes for dere som ikke har allergier. 

As you probably know by now I prefer natural ingredients and food without any additional additives, since this effects my symptoms and health on a daily basis. But there are times I love indulging and make cakes that aren't super healthy or good for me, and this is when I make my favourite vegan and gluten free Oreo cake. This recipe can be used by those who dont have allergies as well. 


SHOPPING LIST 

 4 cups of vegan cream cheese
2/3 of a dark chocolate bar
Ca 50 g plant butter
2 packages of vegan & gluten free Oreos ( ca 400 gram) 
1 packaged of soy cream (soya kremfløte)
2,5 dl icing sugar (melis)
Ca 0,5 dl chocolate milk
 2 tbsp maple syrup
1 tsp vanilla sugar


THE CRUST: Oreos and butter.

FIRST LAYER: 2 cups of cream cheese, melted dark chocolate, chocolate milk, maple syrup and vanilla sugar. 

TOP LAYER: 1-2 cans of cream cheese, soy cream, icing sugar and chopped Oreos (for a little texture).

THIS IS HOW YOU DO IT 

    • Crush the Oreos in a blender. 
    • Melt the butter and add it to the crushed Oreos and blend it together. 
    • Put the crust dough in the cake mold and press it out to make an even first layer of the cake. 
    • Melt the dark chocolate. 
    • Mix the first layer together: 2 cups of cream cheese, chocolate milk, maple syrup, vanilla sugar and the melted chocolate. 
    • When the first layer is done, pour it over the crust and make sure its fully covered. 
    • Mix the top layer: Start with soy cream and icing sugar in the blender, when its whipped cream add 1-2 cups of vegan cream cheese. Blend it together, and add some crushed Oreos for a nice crunchy texture. 
    • Pour it over as the top layer and even it out nicely. 
    • Cover the cake and put it in the fridge for a few hours. I usually let it stay over night.
    • Before serving decorate with what you like: I usually use berries, pomegranate, dried flowers or grated chocolate. You can also add a few Oreos as a decoration! 

    Du kan umulig gjøre så mye feil når du lager denne kaken! Alt jeg lager gjør jeg på ca mål og det kan du også gjøre. Vil du ha en tykkere bunn kan du helt fint doble oppskriften på bunnen, uten å gjøre noe med de to andre lagene. Kaken er skikkelig mektig og skikkelig god, og nei det er ikke den mest usunne heller!     You can't really mess it up when making the cake, everything I do is always on ca measurements and that you can do as well. If you want a thicker crust you can double the crust recipe without changing the other two layers. This Oreo cake is very sweet and filling but not the unhealthiest, which is why I love it so much.
