THE VEGGIE BURGER FORMULA

Kunsten å lage en perfekt veggieburger faller på grunnoppskriften ettersom det er fort gjort at ting faller sammen når man unngår å bruke matverdenes unsunne bindemidler. For en god stund siden fant jeg en veggie-burger-formula på en eller annen nettside. Jeg har endelig fått oversatt den og gjort den til min egen og nå vil jeg veldig gjerne dele den med dere! Håper det går bra at resten av oppskriften er på engelsk! 

The art of making a perfect veggie burger lays on the base formula. I used to find it difficult to make a perfect burger that would stick together and at the same time taste delicious. I found a formula online and I have now adapted it for myself and I want to share it with you!

HERE IS THE FORMULA

Base:  lentils, beans, chick peas etc. 
Spices: chili, garlic, capsicum, cumin, oregano, ginger, salt, pepper etc. 
Chopped veggies: carrot, onion, sweet potato, peas, kale, mushroom etc. 
Dry base ingredients: buckwheat flour, left over rice/quinoa, bread crumbs, oats etc. 
Texture ingredients: cilantro, nuts, basil, olives, sun-dried tomatoes etc. 
Liquid flavours: olive oil, ketchup, mustard, mayo, soy sauce, sweet & sour etc. 


MY VEGGIE BURGER RECIPE

1 can of lentils
1 can of chick peas
1 handfull of cilantro
1 handfull of leaf parsley
1/2 chili
1 cloves of garlic
1 tbsp teriyaki saus
1 tbsp ketchup
1 tbsp water
1/2 chopped onion
1 small grated carrot
salt & pepper
wasabi & sesame spice
1 dl buckwheat flour 


THIS IS HOW YOU DO IT

1. Rinse the chick peas & the lentils (very important for your stomach)
2. Chop the veggies
3. Put everything in a blender
4. Add spices and the liquid ingredients
5. Add the dry base ingredients (which for me was buckwheat flour) 
6. Preheat the pan with oil and form burgers by using two tablespoons. 
7. Fry until they are crispy on both sides - be careful when flopping, be gentle!

Jeg har brukt et glutenfritt brød fra Hatting og som topping har jeg brukt rødløk, spinat, avokado, ketchup, grov sennep, tomat og en hjemmelaget tzatsiki (salt, pepper, agurkbiter, vegansk rømme, vegansk mayo, et fedd hvitløk og litt saft fra en sitron). Et lite tips er å skjære opp rødløken å la den ligge noen timer i en bolle med vann for å få en mildere smak og gjøre den enklere å fordøye. Det er bare å leke seg med denne oppskriften, det viktigste er at du får en fin konsistens så du kan forme burgere og så klart at det smaker godt, men det kan man smake til underveis! Enjoy!

Ive used a gluten free burger bun from the brand Hatting and as topping Ive used red onion, spinach, avocado, ketchup, mustard, tomato and homemade tzatsiki (salt, pepper, chopped cucumber, vegan sour cream, vegan mayo, one clove of garlic and a little bit of juice from a lemon). A little tip is to cut the red onion and leave it in a bowl of water for a few hours, it will be much milder and easier to digest. You can play around with this recipe, the most important thing is that the texture is good so you can form the burgers and the taste is good of course. But you can taste as you go, to make sure its perfect! Enjoy!
